“For anyone who knows our history well, we’ve done IPS for many years,” Perkins says of Hugh Malone, which first brewed in 2007.

Constructing Crosswords: Themes
How does Allagash, a company known for avoiding trends, come to brew its first-year IPA? To begin with, they make it a company-wide project
“We made 17 different pilot batches of IPA before we actually landed on this version,” says Perkins. And every time we did a round of IPAs, we looked at the input of all our employees. “
Somewhere along the way during that 17-batch process, Allagash brewers settled on a blend of older hops like Nugget and Cascade, and proprietary hops like Citra and Mosaic. There’s also some Cashmere and El Dorado, and the beer’s name, in keeping with the beer’s nature theme, echoes hop vines reaching for the sun.
“We were looking for something from the get-go—the word timeless comes to mind for me,” says Perkins. “Something that’s approachable for different people but strong in hop aroma…not aggressively bitter but somewhat bitter. We don’t want a one-dimensional hop aroma, so we don’t just want huge tropical or huge banana.
