They may be Maine’s best bartenders, but you probably won’t see Allen’s Coffee Flavored Brandy or Fireball Cinnamon Whiskey featured on the menus of many (any?) of Portland’s best cocktail bars. . These places pride themselves on the fresh water they collect; back and food; hand-crafted, bitter and bitter spirits; and custom ice blocks. We’re pretty sure we’re on solid ground when we say that today’s serious drinkers think of Allen’s and Fireball as, well, déclassé.
So we were delighted that Jaren Rivas, the manager of Tipo’s bar in Portland, was not only funny but also serious about our challenge: create delicious food, something that people really want. we to drink with each of these souls – even if we do not meet them in groups or mix with milk. Allen said the challenge was more difficult because it was low in alcohol and “tastes like sugar and coffee.” His first thought was to create something based on getting drinks at Jungle Bird. “I canceled it and I did something else in the end. It just didn’t work. It NEVER worked. If the spices are too dirty or one word, you start over.”
Finally, Rivas added herbal flavors to cut the brandy’s sugary quality, and molasses flavors to underline its coffee notes. His Woo Carré, he said, “is a great winter warmer.”
Fireball presented its own obstacles, namely, “a kind of taste in the process” and “candy-like flavors…To bring that out or to silence it in the space it can complement other things, you have to be very careful with what you do. the flavor and your citrus,” said Rivas. “It’s a delicate balance to try to maintain.”
He tried out his new Allen’s and Fireball on co-workers and managed to fool some of them. In addition, he is very happy to make the drinks. However, he won’t be adding to Tipo’s site program anytime soon (or ever). “These souls,” he said, “have a time and a place.”

The Vieux Carré (French Quarter), a classic New Orleans drink, was inspired by Rivas’ Woo Carré. “The woo part came from – at the bars you get woo girls,” Rivas said. “They go to the bar and have a couple of drinks and they go ‘Woooo!’ “
Combine all ingredients except lemon zest in a mixing glass with ice. Combine and strain into a chilled, rinsed rocks glass. Garnish with lemon zest.

The video is no April Fool’s joke, I tell you. This is me, bored and desperate to solve the puzzle and talk about it. If I were to do something like this again, I would need better lighting and a reliable microphone, for starters. But whatever. It’s different. Something you never saw. Here’s the tl;dr version of the video: no, thanks. The gag worked the first time, with the original theme, but with the later creators, I didn’t look at the clues, because I didn’t have them. I only got verses and searched for the phrases “no idea!” So I had an early moment of “ah, cute,” and then, the experience was great. After that, it’s just a bit of filling down the side. The end.
